Here's what James' birthday cake looked like before frosting. I think it tastes great as is, but the frosting adds extra yumminess. If you're using regular flat pans rather than a Bundt pan, you could probably get two layers out of this recipe. Then you could put some vegan cherry pie filling between the layers...
Here's the cake with vegan "buttercream" frosting. The icing was supposed to be red (James' request) but it came out bright pink to match his shirt.

Chocolate frosting1 cup vegan margarine Mix everything together. If it's too thin, add more icing sugar; if it's too thick, add a tiny bit of soydrink. |
