Vegan chocolate cake and frosting

Here's what James' birthday cake looked like before frosting. I think it tastes great as is, but the frosting adds extra yumminess.

If you're using regular flat pans rather than a Bundt pan, you could probably get two layers out of this recipe. Then you could put some vegan cherry pie filling between the layers...

Here's the cake with vegan "buttercream" frosting. The icing was supposed to be red (James' request) but it came out bright pink to match his shirt.

I gave James this stein as a birthday gift. (I think he liked it, but it's hard to get him to smile for photos...) You can get your own personalized lovebirds stein or mug from my online store, Compassion Fashion.

Nicky's friend Anna isn't vegan, and normally she doesn't like my baking, but this cake won even her approval!

Chocolate cake

Dry ingredients

3 cups flour
2 cups sugar
2 tsp baking soda
1 tsp salt
6 Tbsp cocoa powder

Wet ingredients

2 Tbsp vinegar
3/4 cup oil
2 tsp vanilla extract
2 cups water

1. Preheat oven to 350°F.
2. Mix dry ingredients.
3. Mix wet ingredients in another vessel.
4. Add wet to dry and mix well.
5. Pour into cake tin and bake 30 minutes or until toothpick inserted in the centre comes out clean.

Chocolate frosting

1 cup vegan margarine
4 cups icing sugar
2 Tbsp vanilla extract
1/4 cup vegan soydrink
1/2 cup cocoa powder (or more)
a dash of salt

Mix everything together. If it's too thin, add more icing sugar; if it's too thick, add a tiny bit of soydrink.
