Vegan cinnamon buns

I adapted this recipe from one posted by Bronwyn MacDonald on the Toronto Animal Rights Society mailing list. If you live in Toronto, don't miss TARS's potlucks, held twice a month. Each potluck is followed by a speaker or video—a great way to learn more about animal rights, as well as meet cool people and get an (almost) free delicious vegan meal. Bronwyn got the recipe from Burgers 'n' Fries 'n' Cinnamon Buns by Bobbie Hinman.

Cinnamon buns

Topping

1 Tbsp vegan margarine, melted
3 Tbsp maple syrup
2 Tbsp firmly packed brown sugar
cinnamon (to taste)

Filling

1 Tbsp firmly packed brown sugar
1/2 tsp cinnamon

Dough

3/4 cup whole wheat flour
3/4 cup white flour
1 Tbsp baking powder
1 Tbsp firmly packed brown sugar
3 Tbsp vegetable oil
1/2 cup orange juice
1 tsp vanilla extract

Glaze

1/4 cup icing sugar
1 1/2 tsp vegan soydrink

1. Preheat oven to 350°F.
2. Mix ingredients for topping in a nonstick round cake pan.
3. In a large bowl, combine dry ingredients for dough.
4. Add oil and cut in with a fork.
5. Mix in orange juice and vanilla to make a soft dough.
6. Turn dough onto floured surface, knead lightly, and roll out into an 8" x 16" rectangle.
7. Mix together filling ingredients and sprinkle on dough.
8. Roll up to make a 16" long log.
9. Slice into 12 pieces.
10. Arrange pieces in cake pan.
11. Flatten with hands to fill the pan.
12. Bake for 15 minutes.
13. Mix together glaze ingredients.
14. Let baked buns sit in pan for 2-3 minutes, then turn out onto a plate.
15. Drizzle glaze over buns and serve immediately.
