Vegan marble cake: Chocolate and vanilla

Vegan marble cake before icing.

Here's the marble cake without icing. I think it's good like this, but Nicky wanted green icing, and it was his birthday after all. I baked it a bit too long, it shouldn't be quite so brown when you do it.

Nicky wanted to be in charge of the sprinkles and chips. He wanted four kinds of chips: chocolate chips, mint chocolate chips, white chocolate chips, and peanut butter chips. Unfortunately I couldn't find vegan mint chocolate chips in time (we have bought them at Bulk Barn in the past). We got the white chocolate chips and peanut butter chips at Kosher City Plus, 3468 Bathurst Street, North York. Kosher stores are a great source of non-dairy candies.

The festivities begin. That's Nicky's best friend, Areg, on the right.

With some effort, Nicky blows out all the candles, which means he gets his secret wish.

The cake was a hit!

Marble cake

1/2 cup vegan margarine
1 cup sugar
egg replacer equivalent to 2 eggs
2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup vegan soydrink
1 teaspoon vanilla
1 3/4 cups flour
1/6 cup melted vegan chocolate chips
2 tablespoons vegan soydrink

  1. Grease and flour a round cake pan. Preheat oven to 350°F.
  2. Cream together margarine and sugar.
  3. Add egg replacer. Mix well.
  4. Add baking powder and salt. Mix well.
  5. Add soydrink. Mix well.
  6. Add flour gradually.
  7. Divide batter into 2 halves in 2 separate bowls.
  8. Mix melted chocolate chips and soydrink into one half.
  9. Spoon into cake pan, alternating spoonfuls of chocolate and vanilla.
  10. Bake 50-60 minutes. Test with a toothpick to ensure it's done.

Vegan icing

I didn't use a proper recipe because it turned out I didn't have as much vegan margarine on hand as I thought.

It's not hard to make vegan icing anyway. I just mixed up lots of icing sugar (around 4 cups for one cake) with a bit of margarine, a small amount of soydrink, some vanilla extract and green food colouring.
