Here's the marble cake without icing. I think it's good like this, but Nicky wanted green icing, and it was his birthday after all. I baked it a bit too long, it shouldn't be quite so brown when you do it.
Nicky wanted to be in charge of the sprinkles and chips. He wanted four kinds of chips: chocolate chips, mint chocolate chips, white chocolate chips, and peanut butter chips. Unfortunately I couldn't find vegan mint chocolate chips in time (we have bought them at Bulk Barn in the past). We got the white chocolate chips and peanut butter chips at Kosher City Plus, 3468 Bathurst Street, North York. Kosher stores are a great source of non-dairy candies.

Vegan icingI didn't use a proper recipe because it turned out I didn't have as much vegan margarine on hand as I thought. It's not hard to make vegan icing anyway. I just mixed up lots of icing sugar (around 4 cups for one cake) with a bit of margarine, a small amount of soydrink, some vanilla extract and green food colouring. |
