Vegan scones

Yummy yummy scones.

Vegan scones with Manitoulin Island no-sugar cherry spread.

Adapted from an omni website, and approved by James.

Vegan scones

Dry ingredients

2 cups flour
1 Tbsp baking powder
1/2 tsp salt
2 Tbsp sugar

Other ingredients

1/2 cup plus 1 Tbsp vegan margarine
1/3 cup vegan soydrink
egg replacer equivalent to 1 egg

  1. Preheat oven to 450°F.
  2. Mix dry ingredients.
  3. Cut in margarine.
  4. Make a well in the middle, add soydrink and egg replacer.
  5. Mix with a fork to form a soft dough.
  6. Knead lightly. Shape into 2 discs about 3/4" thick. Cut each disc into quarters
  7. Put on a baking sheet and bake for 10-15 minutes, until light golden brown.
  8. Serve warm with vegan margarine and/or jam.
